Measure 1 cup of sugar and add to the saucepan.
Place the saucepan on the stovetop at medium heat.
Stir frequently while the mixture simmers for about 10 minutes. You can also use a masher while heating to really press the cherries.
Remove from the heat and pour mixture through fine mesh strainer to separate any large chunks of cherries.
Pour liquid into a mason jar or small pyrex and store in the fridge.
It takes about 1 - 2 hours for the syrup to thicken up and cool off.
Storage
- Keep in fridge in covered jar for 2 - 4 weeks.
- Can freeze in ice cube tray if you won't use it in 2 - 4 weeks.
Tips
- Make sure to strain out any cherry pieces before storing in the jar.
- Leave to sit and cool in the fridge for at least 1 - 2 hours before using so that it thickens up.
- Stir frequently while heating so that it does not burn or scorch on the bottom of the pan.
- Do not let it full boil. Just a low simmer.
