    Virgin Pina Colada

    Creamy coconut, fresh pineapple and crushed ice all blended together, what could be better? Slip into Paradise with this virgin pina colada! With its icy texture and tropical taste this mocktail is just like a vacation in a glass.

    What is a Virgin Pina Colada?

    A virgin pina colada is an icy cold drink that’s a combination of blended pineapple, ice and cream of coconut. This cocktail tastes like a tropical paradise full of sweet, creamy coconut and pineapple flavors.

    This mocktail is a nice twist on a classic cocktail and is perfect for all ages. The cocktail version of a pina colada is simply a combination of pineapple, cream of coconut in rum.

    It’s typically fairly easy to turn classic cocktails in to mocktails by just removing the liquor and possibly adding some club soda or additional juice.

    A few other easy mocktail twist on classic cocktails are this paloma mocktail, virgin strawberry margarita, mai tai mocktail and a virgin old fashioned.

    Equipment

    • Hurricane glasses
    • jigger
    • Blender
    • bar spoon

    Ingredients

    • 1 cup of Pineapple chunks
    • 1 oz Cream of coconut – Make sure that you are using cream of coconut and not coconut cream which is a different product.
    • 1 cup Ice

    Instructions

    Step one

    Gather up everything you’ll need which should be blender, hurricane glass, jigger, ice, chunks of pineapple, and cream of coconut.

    Measure out and add one cup of ice to the blender.

    Measure out and add 1 cup of pineapple chunks to the blender.

    Step four

    Measure out and add 1 oz of cream of coconut to the blender.

    Step Five

    Now you’ll need to get everything blended together. Blender settings and speeds can vary.

    For our blender we use a smoothie setting for a few minutes. The key is to make sure that everything is well chopped up and blended together without being completely liquefied.

    Then, turn the blender off and pour your drink into your glass. If desired, add a small chunk of pineapple to the rim and enjoy.

    When to Make This Drink

    Not sure when to blend this one up? Here are a few events you might want to serve it at:

    • Beach parties
    • Pool parties
    • Barbecues
    • Summer get togethers

    Variations

    One of the nice things about this mocktail is that there are several different ingredient variations you can try out. Here are a few ideas:

    • Use frozen pineapple. Skip the ice altogether and use frozen pineapple. This will lead to a creamier less watered down drink.
    • Use coconut milk. Substitute the cream of coconut for coconut milk. Coconut milk will provide a lighter lightly less creamy drink.
    • Use pineapple juice. You can either substitute the pineapple chunks for 4 oz of pineapple juice or you can go half and half if you want a little of both. The pineapple juice will make this more liquidy and less creamy.
    • Use a flavored simple syrup. Although this is already quite a sweet drink If you do want to have an additional sweetener you can use a pineapple syrup or coconut simple syrup to ramp up the flavors. You only need about a half an ounce.
    • Make it for a crowd. Multiply your ingredients by four or five times and serve this one up to multiple people at once.

    Equipment

    Ingredients
     
     

    • 1 cup Ice
    • 1 cup Pineapple Chunks
    • 1 oz Cream of Coconut

    Instructions
     

    • Grab your blender, glasses and ingredients.
    • Toss 1 cup of ice into the blender.
    • Use the jigger and measure 1 cup of pineapple chunks. Toss that into the blender.
    • Use the jigger to measure 1 oz of cream of coconut. Toss that into the blender.
      *for amounts in cups and tbs, see the notes below.
    • Flip the blender on. Time and setting will depend on the blender you have. A smoothie setting works well. Or on high for 2 minutes or so.
      Note: essentially, you just want all the ice finely chopped and everything all mixed together.
    • Turn the blender off. Then, pour your drink into the glass.

    Notes

    Variations:
    • Add in some frozen pineapple in place of some of the ice.
    • Add a little coconut or pineapple simple syrup.
    • Add in some coconut milk or replace the cream of coconut for coconut milk or coconut water.
    • Add 4 oz of pineapple juice instead of pineapple chunks.
    Measurements:
    If you don’t have a jigger and need to measure in something other than ounces.
    • 2 tbs of cream of coconut
