What is a Cognac and Ginger Ale?
Cognac and Ginger Ale is a light and refreshing cocktail. It sips best from a highball glass over ice and is also has the name Cognac Highball. They are quick and easy to make and pair well with most meals.
Variations
The recipe we are making today is just a standard cognac and ginger ale. You can use whichever cognac you like. We prefer Courvosier, but others like Hennessy or Remy Martin are also very good.
There are a few variations that can change the flavor profile of this drink and make it a whole new experience. The first is a Remy Ginger which uses Remy Martin Cognac. For this cocktail you simply add a couple dashes of aromatic bitters and you’re good to go.
Another variation is called a French Mule. A French Mule is an offshoot of the more well known Moscow Mule. However, instead of using vodka, you swap it out for cognac.

What are aromatic bitters?
Aromatic bitters are simply a concoction of a variety of spices, herbs, dried fruit peels, among other things that can add a bit of bittering flavor to a cocktail. They a very popular in drinks like an Old Fashioned and a Moscow Mule.
The name most people know with bitters is Angostura. You can always buy bitters online or your local spirits store or you can make your own bitters at home.
Other Drinks with Ginger Ale
Ginger Ale is a fantastic mixer with liquor. It has a bite that can give any drink a refreshing and delicious kick. Some good ones are: Vodka Ginger Ale or jager and ginger ale.
How to make this drink:
To make a Cognac and Ginger Ale you just need a few ingredients and it only takes a couple steps.
Step One
Fill a highball glass all the way up with ice
Step Two
Pour 2 oz of your favorite cognac into the glass.
Step Three
Fill the rest of the glass with Ginger Ale.
Step Four
Garnish with a lemon or lime wedge.
Step Four
Stir your drink with a bar spoon and enjoy.

Cognac and Ginger Ale
- 2 oz cognac
- 4 oz Ginger Ale
Remy Ginger
- 2 oz cognac
- 4 oz Ginger Ale
- 2 dashes Aromatic Bitters
French Mule
- 1½ oz cognac
- 2½ oz Ginger Ale or Ginger Beer
- 2 dashes Aromatic Bitters
- 1 wedge lime squeezed
- ½ oz Simple Syrup
Instructions
Cognac and Ginger Ale
- Fill highball glass with ice
- Add in 2 oz of cognac
- Top off with Ginger Ale (approximately 4 oz)
- Stir gently with bar spoon
- Garnish with lime wedge
Remy Ginger
- Fill highball glass with ice
- Add in 2 oz of cognac
- Top off with Ginger Ale (approximately 4 oz)
- Drop in 2 dashes of aromatic bitters
- Stir gently with bar spoon
- Garnish with lime wedge
French Mule
- Fill highball glass with ice
- Add in 1½ oz of cognac
- 2½ oz of Ginger Ale (or Ginger Beer for a stronger bite)
- Drop in 2 dashes of aromatic bitters
- ½ oz of Simple Syrup
- Squeeze 1 lime wedge
- Stir gently with bar spoon
- Garnish with lime wedge
