A ginger beer mocktail is a combination of honey simple syrup, pineapple juice, lime juice and ginger beer. This refreshing drink has a fizzy and spicy ginger flavor that melts instantly with a sweet smooth tropical flavor with a little touch of a lime twist.
This mocktail tastes a little like a Moscow mule mocktail which is very similar except it does not have pineapple juice or honey simple syrup. Both have a really nice spice of ginger beer combined with a citrus twist from lime juice.
This mocktail has a nice sweetness that is melted with the spicy ginger beer. Making it a refreshing and tantalizing drink especially great for sipping during warm weather.

- Add some mint. Ginger and mint are classic combination. You can add some mint flavor to this cocktail by substituting the honey simple syrup for mint simple syrup. Or, you can garnish it with mint leaves. Or, you can muddle mint with the honey simple syrup.
- Make it sweeter. Though this is called a ginger beer mocktail, if you don’t like the spicy flavor of ginger beer you can replace it with ginger ale which has a similar ginger flavor but with a little more sweetness.
- Use lemon juice. Substitute the lime juice for lemon juice. You’ll still get a nice citrus twist with a slightly different flavor. And, honey ginger and lemon are a classic combination.
- Make it less sweet. If you want a lighter, spicier cocktail with less sweetness then you can leave out the honey simple syrup altogether.
- Add even more ginger. Use this ginger simple syrup in place of the honey simple syrup.

- 5 oz Ginger beer – different ginger beers have slightly different flavors. Since this is the star of the show you want to make sure that you get a high quality ginger beer. We really like an extra spicy one like this Jamaican ginger beer.
- .75 oz Lime juice – You can use store-bought or home squeeze. Fresh squeezed at home tends to be a little more tart and fresh flavored.
- 1 oz Honey simple syrup – this is readily available for purchase. Or, you can make it from scratch. If making it from scratch you’ll need 1 cup honey, 1 cup water, 1 cup sugar
- 2 oz Pineapple juice – a 100%, no sugar added pineapple juice is best for this drink.

Step one
Collect everything you need for this drink including rocks glass, ice, jigger, cocktail shaker, Hawthorne strainer, honey simple syrup, ginger beer, lime juice and pineapple juice.
Step two
Toss enough ice into your cocktail shaker and your rocks glass so that they are both filled to the top.
Note: If you don’t have a cocktail shaker then you can use a mason jar to shake everything together. Or, you can add everything to your glass and stir it with a bar spoon.
Step three
Measure out 1 oz of honey simple syrup and toss it into the cocktail shaker.

Step four
Measure out 0.75 oz of lime juice and toss it into the cocktail shaker.
Step five
Measure out 2 oz of pineapple juice and toss it into the cocktail shaker.
Step six
Pop the top on the shaker and shake well. Then, remove the shaker top and strain your drink into the rocks glass.
Step Six
Grab your ginger beer and pour it directly into the glass. You should top the glass off with ginger beer. Depending on the size of glass you use this will usually be from 3 to 5 oz.

Ingredients
- 4 – 5 oz Ginger Beer
- .75 oz Lime Juice
- 1 oz Honey Simple Syrup if you need to make from scratch, instructions are below. Use 1 cup honey, 1 cup water, 1 cup sugar.
- 2 oz Pineapple Juice
- Ice
Instructions
Honey Simple Syrup
- *see notes below if you don't want to make this from scratch.
- Add 1 cup of water to a pot.
- Add 1 cup of honey to the pot.
- Add 1 cup of sugar to the pot.
- Put the pot on the stovetop at medium high heat for about 10 minutes. It should simmer, but not full on boil.
- Stir it frequently while heating.
- Remove from heat and stick into the refrigerator to chill.
Ginger Beer Mocktail
- Fill the rocks glass to the brim with ice.
- Measure out .75 oz of lime juice with the jigger and add it to the cocktail shaker.*see notes below if you don't have a jigger to measure.*see notes below if you don't have a cocktail shaker
- Measure out 2 oz of pineapple juice with the jigger. Add the pineapple juice to the shaker.
- Measure out 1 oz of honey simple syrup with the jigger. Add the honey simple syrup to the shaker.
- Add the top to the shaker and shake it up.
- Take off the top and add the strainer over the shaker.
- Pour the drink from the shaker into the glass.
- Measure out 4 oz of ginger beer with the jigger. Add the ginger beer to the glass.Pro tip: don't measure the ginger beer and instead just pour it directly into the glass until the glass is full.
Notes
- Use lemon juice instead of lime juice.
- Use regular simple syrup if you don’t want to make honey flavored.
- Use another flavor of simple syrup, some good options are: lemon, lime, cinnamon, mint
- Add a flavor by muddling in strawberries, blueberries or another fruit with plain simple syrup.
- Use a different flavored juice like peach or pear
- ½ cup ginger beer
- 1.5 tbs lime juice
- 2 tbs honey simple syrup
- ¼ cup pineapple juice
