    What is a Rainbow Cocktail?

A rainbow cocktail is a layered cocktail with grenadine on the bottom, pineapple juice and vodka in the middle and blue Curacao and vodka on the top. This pretty rainbow colored cocktail is full of tropical sweet fruity flavor.

The tropical flavor in this drink comes in large part from the pineapple juice. Pineapple juice drinks are popular to make when looking for a sweet, fruity cocktail.

The layering in this cocktail and other cocktails, like the Superman cocktail, are made possible due to the fact that different liquids have different densities. For example, grenadine is a very heavy liquid and will almost always sit on the bottom of a drink. Whereas blue curacao is much lighter and can usually float on top. Blue curacao is much lighter and can usually float on top.

    When to Make This Drink:

This fun and colorful drink is perfect for serving up during occasions like:

    Variations:

You have to be careful when substituting ingredients in this cocktail or you might accept the layering effect. However, here are a few ideas that still work:

    • Use peach schnapps. Substitute the vodka in the middle layer for peach schnapps If you would like a peachy flavor.
    • Use flavored vodka. Capitalize on the fruit flavors in the string by using a flavored vodka such as cherry vodka or citrus vodka.
    • Use rum. Substitute the vodka and one or both layers for either white rum or coconut rum if you would like a more tropical flavor.
